What to Do with All that Discard? (4)

Welcome back gentle reader! I hope your family and friends were amazed with that first loaf of sourdough. If it wasn't as spectacular as you had hoped, remember your bread will only get better with practice and a more mature starter. I always say even a sub par loaf tastes great when toasted! So back to that discard. Feels wasteful just to dump it in the trash. Well you don't have to. There are many simple and yummy ways to make use of that discard when it's time to feed your starter. Here are some of my favorites and I think you will find as simple as they are delicious.

  1. Butter Sourdough Biscuits https://www.kingarthurbaking.com/recipes/buttery-sourdough-biscuits-recipe This recipe is fairly quick to make, it's a smaller batch if a small amount of biscuits may be just what you need. (Yes they are buttery, but if you only have one...:)

  2. Fluffy Sourdough Banana Muffins (vanillaandbean.com). I have made discard banana bread too, but I thought I would start with these muffins. They are delicious and easy to pop in the freezer for another day. I thaw them on the counter for a bit and then pop in the oven for a few more minutes, they will taste fresh as the day you made them

  3. Sourdough bread with discard (tastesoflizzyt.com). This is a much quicker recipe that results in what I would call a more traditional type of bread. It's softer than a traditional sourdough loaf and makes excellent toast. It's is one that children may prefer over a traditional loaf.

  4. Sourdough pizza crust https://www.kingarthurbaking.com/recipes/sourdough-pizza-crust-recipe. Why not right? It's a crust you can start and bake in the same day. I make a very simple marinara as my sauce. (find a way to link marinara recipe here...) Makes more than enough for two pies with extra to freeze or perhaps make a simple pasta.

  5. Sourdough Honey Oat Bread (Loskitchenco.com). This is another easy and quick loaf, great for toast and sandwiches.
