Summer Muffin Ideas (12)

Welcome back! I just wanted to write a short post today about some great muffins to make during the summer. I just tried a new muffin recipe: Sourdough Discard Chocolate Zucchini Muffins https://www.pantrymama.com/sourdough-chocolate-zucchini-muffins/

These muffins are amazing! Even if you have members of your family that think they might not like zucchini, they will love these. You can't taste the zucchini, but it certainly keeps these muffins moist. It's another great way to use your sourdough and that extra zucchini you may have laying around. 😉

I made a just a few tweaks to the recipe that I found on the website; pantrymama.com

(I must admit I used the picture from the website. I forgot to take a picture before they were all gone!) I really liked that there is not tons of sugar in this recipe. I also liked that it called for Greek yogurt and olive oil. Seems healthier to me that way.


My changes were minor, I used bittersweet chocolate chips (we like those), but any kind of chocolate chip would be great and I did include the half teaspoon of cinnamon. The recipe comes together quickly and you don't need to use a mixer. It's also important to not drain or squeeze out your shredded zucchini, you need the moisture in this recipe. The batter is a bit gooey. I used the parchment paper tulip muffin liners that I found on Amazon.

These liners work great for any muffin you are making. I also like to scoop the batter with a large cookie scoop. It makes the process a bit less messy.


Fresh blueberries are available now. We are picking up some Michigan blueberries this weekend. I can't wait! They are amazing and make the best blueberry muffins. There are lots of sourdough blueberry muffin recipes out there, but I really like the one I found on allrecipes.com.

I make these as outlined in the recipe, but you can skip the streusel if you like and just sprinkle on some cinnamon sugar, chopped pecans or just leave them plain. They are great any way you decide to make them.


I hope you are enjoying your sourdough baking even though it's summer and a bit warm to have the oven on. What's great about these muffin recipes is that you can make a batch and freeze the extra. They just need to thaw a bit on the counter and they are just as good as when you baked them.


I have to sign off now as I am in the process of making Sourdough Dinner Rolls with Buttermilk. These are the rolls I like to make as sliders. (You can find this recipe in the recipe section on my site.) I am making the dough today and will store in the fridge until I'm ready to bake in a couple of days. I am hosting a Mahjong gathering and planning to serve some chicken salad sliders. A great summer meal or snack!
